African Stewed Chicken: Recipe

Ingredients:
- 1 chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3-4 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2-3 tomatoes, diced
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Preparation:
- In a heated skillet with oil, brown the chicken pieces until golden.
- Add the onion, garlic, and ginger to the skillet, and cook until the onion is soft.
- Add the diced tomatoes, mix, and cook for a few more minutes.
- Pour the broth over the chicken, season with salt and pepper. Bring to a boil.
- Reduce the heat and simmer covered for 30-40 minutes until the chicken is cooked through.
