Fragrant eggplants stuffed with vegetables and baked in the oven

Ingredients:
- 4 medium eggplants
- 2 tomatoes
- 1 onion
- 1 red bell pepper
- 2 cloves of garlic
- Olive oil
- Salt and pepper to taste
- Baking cheese
Preparation:
- Preheat the oven to 180°C.
- Cut the eggplants in half and remove the pulp.
- Heat olive oil in a pan and sauté the onion until golden.
- Add chopped tomatoes, bell pepper, and minced garlic. Cook for 5-7 minutes.
- Add the eggplant pulp, season with salt and pepper, and cook for a couple more minutes.
- Fill the eggplant halves with the prepared filling.
- Sprinkle grated cheese on top.
