  • Chopped fresh parsley 1 Tbsp
  • Dry bread crumbs 4 Cup
  • Grated feta cheese (salt and pepper to taste) 1 Cup

Fragrant eggplants stuffed with vegetables and baked in the oven

This recipe is perfect for those who appreciate simple yet delicious cuisine. Eggplants are filled with fresh vegetables and baked until done, creating the perfect combination of taste and aroma.

Ingredients:

  • 4 medium eggplants
  • 2 tomatoes
  • 1 onion
  • 1 red bell pepper
  • 2 cloves of garlic
  • Olive oil
  • Salt and pepper to taste
  • Baking cheese

Preparation:

  1. Preheat the oven to 180°C.
  2. Cut the eggplants in half and remove the pulp.
  3. Heat olive oil in a pan and sauté the onion until golden.
  4. Add chopped tomatoes, bell pepper, and minced garlic. Cook for 5-7 minutes.
  5. Add the eggplant pulp, season with salt and pepper, and cook for a couple more minutes.
  6. Fill the eggplant halves with the prepared filling.
  7. Sprinkle grated cheese on top.
  8. Place on a baking sheet and bake in the oven for 30-40 minutes.
  9. Serve hot.
