Cauliflower with Eggplant and Sausages

  • Cauliflower 500 grams
  • Greens 50 grams

  • Pepper 2-3 pinches

This is a simple yet incredibly appetizing recipe for sautéed vegetables with sausages. You will need the following ingredients:

  • 300 grams of eggplant
  • 150 grams of onion
  • 150 grams of carrot
  • 200 grams of sausages
  • 500 grams of cauliflower
  • 50 grams of greens
  • 2-3 pinches of salt
  • 3-4 tablespoons of vegetable oil
  • 2-3 pinches of pepper

Let's get cooking:

  1. Peel and dice the eggplant.
  2. Grate the carrot on a coarse grater and finely chop the onion.
  3. Heat vegetable oil in a pan, add the onion, and sauté until translucent.
  4. Then add the carrot and fry for another 5 minutes.
  5. Add the eggplant to the vegetables and stir well.
  6. Cut the sausages into circles and add them to the pan.
  7. Season with salt and pepper, pour in water, and mix everything well.
  8. Cover the pan with a lid and simmer over medium heat for 20-25 minutes, stirring occasionally.
  9. When the vegetables are soft, remove from heat and let sit covered for a while.
