Indian Dish: Chicken with Apricot Filling
This recipe represents an amazing Indian treat, where chicken is stuffed with sweet apricots. You will need to combine the aromas of Eastern cuisine and incredible flavor.
Ingredients:
- 1 chicken (whole, about 1.5 kg)
- 200 g apricots (dried)
- 50 g nuts (walnuts or similar)
- 1 onion (finely chopped)
- 1 teaspoon coriander (ground)
- Salt and pepper (to taste)
- 2 tablespoons oil (vegetable)
Preparation:
- First, prepare the filling. Soak the dried apricots in warm water for 30 minutes, then chop them finely.
- In a pan, heat the oil, add the onion, and sauté until golden brown.
- Add the chopped apricots and nuts to the onion, along with coriander, salt, and pepper. Stir all the ingredients and let them cook on the stove for another 5 minutes.
- Now, prepare the chicken. Rinse it thoroughly under cold water and then pat it dry.
- Stuff the chicken with the mixture. Secure the filling with toothpicks or kitchen string.
- Place the chicken in a deep baking dish and roast in an oven preheated to 200 degrees for 1.5 hours, basting occasionally with the juices that accumulate.
- Let the finished chicken rest for 10 minutes before serving. Serve with rice or fresh vegetables.
