Recipe for Thick Onion and Herb Soup
This delicious and hearty soup is perfect for lunch or dinner. It is very easy to prepare and contains healthy ingredients.
Ingredients:
- 500 g onions
- 200 g potatoes
- 150 g herbs (parsley, dill)
- 2 liters of water
- Salt to taste
- Black pepper to taste
- Olive oil - 2 tablespoons
Preparation:
- Cut the onion and potatoes into cubes.
- In a pot, heat the olive oil and sauté the onions until golden brown.
- Add the potatoes and sauté for a few more minutes.
- Pour in the water and bring to a boil. Reduce the heat and simmer for 15-20 minutes until the potatoes are tender.
- In the final step, add the chopped herbs, salt, and pepper. Cook for another 5 minutes.
- Remove from heat and let it sit covered for 10 minutes.
- Serve hot, optionally with bread.
