This simple Italian recipe features pasta, mushrooms, and a variety of vegetables. It's easy and quick to prepare, making it perfect for a weeknight dinner. You can use any preferred pasta and fresh or frozen vegetables.

Ingredients:

  • 300 g pasta
  • 200 g mushrooms
  • 1 bell pepper
  • 1 medium zucchini
  • 2 cloves garlic
  • 50 ml olive oil
  • Salt and pepper to taste

Preparation:

  1. First, boil the pasta according to the package instructions until al dente.
  2. Meanwhile, chop the mushrooms and vegetables.
  3. In a skillet, heat the olive oil and sauté the garlic until golden.
  4. Add the mushrooms and cook until soft.
  5. Add the bell pepper and zucchini, sauté for a few more minutes.
  6. Mix the vegetables with the cooked pasta, season with salt and pepper.
