Chilled Summer Soup Recipe
This refreshing soup is perfect for hot days. It’s light, tasty, and can be served either cold or hot.
Ingredients
- 1 liter of vegetable broth
- 400 g fresh cucumbers
- 200 g tomatoes
- 1 red bell pepper
- 50 g green onions
- Salt and pepper to taste
- Olive oil
Preparation
- Add the chopped cucumbers and tomatoes to the boiling vegetable broth.
- Add the chopped red bell pepper and green onions.
- Season with salt, pepper, and add a little olive oil.
- Stir all the ingredients vigorously and let the soup chill in the refrigerator for a few hours.
- Serve cold or heat it up if desired.
