Remove the meat from the pan. Pour in 2 tablespoons of olive oil and add the sage. Sauté for 1 minute. Add cayenne pepper and leek. Cook for another 2-3 minutes. Return the meat to the pan. Turn off the heat. | |
For the sauce: In a pot, pour in 1 tablespoon of olive oil. Add cumin, garlic, and onion. Sauté for 3-4 minutes. Stir in canned tomatoes. Reduce heat and simmer for 20 minutes. Add sugar and salt. Stir and continue to cook for another 2 minutes. Blend the tomatoes into a smooth consistency, then add milk and butter, stirring again. Mix the rigatoni (cooked in salted water) with the sausage, place on a platter, and drizzle with sauce. |
