Rye Accordion Cookies

A fantastic recipe for creating rye cookies in the shape of an accordion. This cookie combines an original appearance with an amazingly tasty balance of rye flour.

Ingredients

  • 200 g rye flour
  • 100 g sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 150 g butter
  • 1 egg
  • 1 tsp vanilla extract

Preparation

  1. In a large bowl, mix the rye flour, sugar, baking powder, and salt.
  2. Add the soft butter and mix well until crumbly.
  3. In a separate bowl, beat the egg with the vanilla extract, then add to the flour mixture and knead the dough.
  4. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
  5. Preheat the oven to 180 degrees Celsius.
  6. Roll out the dough into a thin layer, cut it into strips, and form into rolls.
  7. Place the rolls on a baking sheet lined with parchment paper and bake for about 15-20 minutes until golden brown.
  8. Cool before serving.
