Broccoli and Fennel Soup
This hearty soup is not only delicious but also nutritious. Broccoli is rich in vitamins, while fennel adds a unique aroma to the dish.
Ingredients:
- 1 head of broccoli
- 1 fennel bulb
- 1 onion
- 2 garlic cloves
- 500 ml vegetable broth
- Salt and pepper to taste
- Olive oil
Preparation:
- Wash the broccoli and break it into florets. Slice the fennel thinly.
- Chop the onion and garlic, then sauté them in olive oil until golden.
- Add the broccoli and fennel to the pot and sauté for a few minutes.
- Pour the broth over the vegetables and simmer for 15-20 minutes until tender.
- Using a blender, puree the soup to a smooth consistency.
- Season with salt and pepper to taste, and serve hot.
