  • Roasted red pepper 1/3 Piece
  • Basil leaves 3 Pieces
  • Mozzarella cheese 56 Grams
  • Wine vinegar 3 Teaspoons

Making a sandwich with mushrooms, eggplants, and cheese is a great way to surprise your guests. This appetizer is not only delicious but also visually appealing.

Ingredients

  • mushrooms - 200 g
  • eggplant - 1 pc.
  • cheese - 150 g
  • bread - 4 slices
  • garlic - 1 clove
  • olive oil - 2 tbsp.
  • salt and pepper - to taste

Instructions

  1. Cut the eggplants into cubes, salt them, and leave for 15 minutes to remove the bitterness.
  2. Meanwhile, finely chop the mushrooms and sauté them in olive oil.
  3. Set the sautéed mushrooms aside and fry the eggplants in the same pan until golden brown.
  4. Mix the mushrooms with the eggplants, add finely chopped garlic, pepper, and a bit of salt.
  5. Spread the resulting filling on the slices of bread and top with grated cheese.
  6. Bake in the oven at 180°C for about 10 minutes until the cheese is melted.
  7. Serve hot!
