Lenten Borscht: Classic Recipe

This lenten borscht is a wonderful dish for those seeking lightness and rich flavor. It's perfect for adhering to Lent or simply for adding variety to your menu.

Ingredients:

  • 2 medium-sized potatoes
  • 1 carrot
  • 1 onion
  • 100 g of cabbage
  • 2 tbsp of vegetable oil
  • Salt and pepper to taste
  • Herbs for garnish

Preparation:

  1. Peel and chop the potatoes, carrot, and onion.
  2. In a large pot, pour a bit of vegetable oil and sauté the onion until golden.
  3. Add the carrot and potatoes, continue to sauté for a few more minutes.
  4. Then add the cabbage and pour in water (about 1.5 liters).
  5. Bring to a boil, reduce heat, and cook for about 20-30 minutes until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with herbs.
